Prawn Sothi

This is a simple creamy coconut curry that is quick and simple to prepare. It goes well with most seafood or just vegetables.

500 g prawns, shelled and cleaned
1 teaspoon light soy sauce
half teaspoon white pepper

Mix these ingredients in a bowl and set aside.

1 large onion, finely diced
3 garlic cloves, finely minced
1 teaspoon ginger, finely minced
1/2 teaspoon fenugreek seeds
1/2 teaspoon mustard seeds, crushed
1 sprig curry leaves
1 green chilli, sliced
1 teaspoon turmeric powder
1/2 teaspoon cumin powder

150 ml coconut cream
400ml water 
1 tsp salt 
2 tomatoes, quartered
half teaspoon tamarind extract
half teaspoon sugar

Heat some vegetables oil in a small pot. Saute the onions, curry leaves and ginger for a minute. Then add the garlic, green chillies, fenugreek and mustard seeds. Stir-fry for a minute or so. Then add the tomatoes, water, tamarind and salt. Cook for 2 minutes till it comes to a boil Then add the prawns, coconut and spice powders. Mix well and cook on a simmering heat for 1 minute. Stir in the sugar and mix well. Take off heat.

Serve with pickles or achar and papadoms. Vegetable to accompany this can be stir-fried cabbage or some other vegetable.

Whitebait fried

200g whitebait fish
1 tablespoon cornflour
Half cup of plain flour
Half teaspoon white pepper powder
Half teaspoon salt
Mix the flour, cornflour, salt and pepper together. Set aside.
1 egg, beaten
Dip fish in egg. Dredge each fish in flour mixture. Deep fry till golden and crispy. Drain on absorbent kitchen paper towel.
Serve with chilli sauce.

Macaroni and sausages

1 packet good pepper sausages
1 medium size bowl uncooked macaroni
Half a yellow onion, diced
3 small tomatoes, quartered
A handful of snow peas was or French beans
6 to 8 shiitake mushrooms, sliced
4 cloves garlic, crushed and finely minced
Half of a vegetable stock cube
Salt and pepper
Slice sausages no bigger than macaroni pieces. 

Boil macaroni in salted water until al dente. Drain water. Set aside.
Dissolve stock cube in one cup of hot water.
Heat a few tablespoons of oil in a skillet and saute the onions till soften and then add the garlic. Add the mushrooms and French beans.  Season with a little salt. Mix well. Add the stock and cook for 2 minutes on a simmer. Add the sausages and mix. Then lastly add the macaroni. Mix well to combine all ingredients together. Add more salt if required.

You can add sambal if you like a spicy dish.

Chicken in Soy Sauce Gravy

6 -8 chicken wings
4 potatoes, peel and quarter
1 large onion, slice
4 cloves garlic, crushed
1 inch ginger, sliced thinly
1/4 cup dark soy sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon vinegar
1 tablespoon sugar
2 cups water

Heat a little vegetable oil in a pot. Saute the ginger and onions for 3 minutes.  Marinate the chicken with dark soy sauce. Leave aside. Add the garlic to ingredients in pot. Stir fry  for about 30 seconds. Add the chicken (without marinade) with the salt and pepper and mix well. Cook for 2 minutes stirring now and then. Then add marinade. Mix well. Add water and potatoes. Stir to mix. Simmer on medium low heat for 8 minutes. Stir in the sugar and vinegar. Cook for 2 to 3 minutes longer. 

Serve with rice and an achar or sambal.

Spagetti stir fry

I/3 packet of spaggetti
10 shrimps, shell removed
3 sausages, sliced thinly
10 to 12 french beans, sliced on the slant
Half a carrot, sliced thin strips
8 garlic, pounded or finely chopped
2 red bird's eye chilli or 1 teaspoon chilli powder
3 tablespoons light soy sauce
1 teaspoon salt

Add 1 tablespoon soy sauce to the prawns. Set aside.
Cook the spagetti in slightly salted boiling water for about 8 minutes.  Strain and set aside.
Heat a little vegetable oil in a wok or skillet. Saute the garlic. Add the carrot and french beans. Season with salt.  Mix well and stir fry for 1 minute. Pus to one end of frying pan and stir fry the sausages for a minute or less. Add prawns and chilli and soy sauce. Bring all ingredients together in the pan. Stir fry for 2 minutes.  Then add the cooked spaggetti. Mix all ingredients together until well combined. Add half teaspoon salt and the remainder soy sauce. Mix well. Stir in tomatoes and cook just a minute longer.

Spinach and Ham Quiche

Shortcrust pastry
8 oz all purpose flour
1/4 teaspoon salt
1 egg, beaten
3 ozs butter, cubed and chilled
2 tablespoons cold water
Mix the flour and salt together. Rub the chilled butter into the flour until crumbly. Add the egg and water and mix to a soft dough. Knead for a minute. Cover and chill.
Roll out dough on a lightly dusted surface. Cover a greased shallow dish. Blind bake for 15 minutes.
Filling:
1 medium onion, sliced finely
2 garlic, mashed
1 cup chopped spinach.
Saute onion and garlic in butter. Add the spinach and 1/4 teaspoon salt. Set aside. Chop finely.
250 ml single cream or evaporated full cream milk
4 eggs, beaten
1/8 teaspoon salt
Beat the eggs. Stir in the salt and milk. Mix.
1/2 cup ham, cut into small cubes
1/2 cup mozzarella cheese, grated
Stir the ham and spinach into the creamy egg mixture. Pour into tart dish with pastry. Sprinkle the cheese on top. Stir it in with a fork. Bake for 30 minutrs in a 200 C oven. Cool 15 minutes before cutting.

Easy Chicken Stew

Half of a chicken or just chicken breasts, cut into chunks
Spices: cinnamon stick, star anise, cloves (just a few)
1 large onion, diced
2 garlic, crushed
4 potatoes, peel and quartered
1 carrot, cut into bite chunks
1 celery, cut into bite pieces
600 ml water
1 chicken stock cube
Salt and pepper
2 tablespoons butter

Heat some butter in a pot and saute the spices for 15 seconds and then add the onions and garlic. Stir-fry for a minute or two. Add the chicken, ½ teaspoon salt and 1 teaspoon pepper. Stir all the ingredients together in the pot for a minute.  Then add water, chicken stock cube and the vegetables. Mix and allow the stew to come to a steady boil. Simmer on medium high heat for 15 minutes. Add more water (hot) if the liquid is too little. It should just about cover the top of ingredients. Taste stew liquid and add more salt if necessary.

Note: you can chop a little cilantro and stir it in at the end.
